Fusión Mexicana opens in Darlington Market to rave reviews

Now based in Darlington Market, Fusión Mexicana opened on Thursday (October 5) to a number of happy customers and a menu of burritos, fajitas and tacos.

The new venture will be run by owner Katie Miller and her partner David Chadwick, who opened their restaurant House of Flavor on Duke Street four months ago.

The pair said ongoing developments and the market’s “mood” were among the factors in deciding to open at the venue, which is operated by Market Asset Management (MAM).

Mr Chadwick previously said: “The food for Fusion Mexicana will be super fresh and traditional.”

“Everything is freshly prepared. Everything is fresh to go. It’s restaurant quality street food.”

“It’s not full of fat, the idea of ​​fusion is much fresher. It’s fresh from local suppliers, we prepare it throughout the day and serve it little by little.”

“There was a huge turnout and we loved that the venue had lots of themed nights, live entertainment and live music. We achieve a certain brand presence simply through our presence.

“In general, it’s great for Darlington to have a place where money is being spent so independent businesses can try to grow and develop.

“There aren’t many places where small startups can do this. They’ve obviously built a little community down there and we can’t wait to be a part of it.”

The menu includes Mexican-style pulled pork, smoky chipotle chicken and mixed bean chill burritos, all stuffed with rice, black beans, cheese and lettuce.

Other options include pico de gallo with guacamole, salsa and sour cream.

And with a menu that offers all of that, you can expect to see the number of satisfied and enthusiastic customers that Fusión Mexicana has.

One person posted online reviews of the new Mexican restaurant and said: “It’s worth a try and something different for Darlington,” while another added: “Perfect little spot for Darlington Market – hopefully it stays longer than some.”
