New chef at The Wild Swan in Minskip, near Boroughbridge

The Wild Swan in Minskip, near Boroughbridge, which has had a brilliant start to 2023, has a new chef de cuisine, Jason Bishop, replacing Paul Murphy.

Stephen Lennox, who co-owns The Wild Swan with his business partner Alex Bond, said: “We would like to thank Paul for his hard work over the past year or so and wish him and his family all the best in their future plans and opportunities.”

“He has worked well with our talented team of chefs but we are delighted to announce the arrival of Jason Bishop as our new executive chef who will continue to expand our food offering.”

“Jason is a wonderfully talented chef who has worked in some of the finest restaurants across Yorkshire. He’s been on our radar for 18 months and we couldn’t pass up the opportunity to materialize this partnership at the start of a busy summer. We look forward to our customers enjoying Jason’s new spring and summer menus in our restaurant or outdoors in our newly renovated beer garden.”

The inn, just 30 seconds from junction 48 of the A1(M), has also just opened a newly renovated beer garden that can accommodate up to 36 guests in addition to the 60 seats in the main pub.

Alex said: “The refurbishment of our beer garden is another significant chapter in the recent history of the Wild Swan. We’ve always had tables outside, but our newly designed beer garden offers a much richer and more attractive dining and drinking experience. It’s the perfect sun trap between the rear of the historic Inn and a characterful disused mill. It will be ideal for the coming summer months.

“The opening of our renovated beer garden is also a successful start to the year for us. Despite the ongoing cost of living crisis, which has severely impacted the hospitality sector, we have been consistently busy. We are particularly pleased with the large number of people who keep coming back and make the Wild Swan their favorite inn and restaurant in the area.”

Meanwhile, Alex said Wild Swan’s popular wood-fired pizzas are making a return every week on Wednesdays, Fridays and Saturdays, and will launch a new summer menu soon, as well as an exciting new selection of summer cocktails, including cocktails to share and pitchers of sangria.
